With our garden in full summer bloom, I'm loving having an abundance of cucumbers!
This lunch is a breeze, toast some bread, slice some cucumbers and spread on some
basil aioli. You know I'm the biggest cheat when it comes to cooking,
so it's no surprise this aioli is super simple ~ the quick gal's version.
Mix light mayonnaise with a generous amount of chopped basil.
Add salt & pepper to taste.
*this is also great with some fresh minced garlic and a squeeze of lemon*
